Participants will complete a high performance chef knife with excellent design, geometry, and fit and finish. 

In this 5 day class, students will complete a hidden tang, Japanese or western style chef knife. Blades will be forged from AEB-L stainless steel and the proper forging techniques, thermal cycling, plate quenching and cryogenic tempering will be covered. Once ground, students will be taken through the loving steps to give their blades a clean belt finish, a hand sanded satin finish will be discussed and covered. Multi piece, octagonal handles will be made from figured hardwoods.
